However, all the cream called for is heavy cream or whipping cream which usually comes ultra-pasteurized that can be hard to beat, so if you can find just regular pasteurized cream, it is preferable for whipping.

Heavy cream, also known as heavy whipping cream, doubles in volume and hold its shape when whipped. Essentially, heavy cream has a slightly higher butterfat percentage (between 36 to 40%) than whipping cream (around 30 to 35%). If you’re whipping cream to dollop on pie and cake, heavy cream and whipping cream will both deliver. However, if you want to pipe whipped cream or create a specific topping or filling a cake, at 30 percent milk fat, whipping cream is just rich enough to set. if you want to whip your cream more than a few hours ahead, go for heavy cream.
