Think of yaki noodle, there’s nothing delight than twist on Japanese street food. Mix and match the tender mushrooms across the golden shrimps and fresh spice ingredients. to make this bowl full of flavors.

These are all wonderful, whether it’s for breakfast, lunch, or dinner. And they make a nice, satisfying any day of the week. There’s a bowl for everyone.

If you are a lover of all thing noodles, count me in…well, consider this the perfect introduction.

Quick pickle chilis serve as a side dish.

Make Ahead

  • To save time on the kitchen, this is quick and easy, pickled chilis can be made up for 5 days before serving, just keep it in a jar, cap tightly and refrigerate.

Make It Spicy

  • Sprinkle chili flakes over the dish. It really adds great flavor, you don’t have to worry about it hot. Try it!

Variations

  • Use skinless chicken breast cut into bite-size pieces instead of the shrimps.

Ingredients Prep Save your Time

Thanks for ingredients prep, it’s a great time-saving method that works for me. It’s just prepping the components. Most vegetables that are going to be cooked can be chopped ahead of time, and refrigerated in airtight containers. You can throw together when you need it. At that point you just cook. For anyone with a busy lifestyle but are going to be saved raw, they should be prepared as close to saving time as possible. Fresh herb should be chopped right before using because cutting caused them to wilt and break down.

It has made cooking so much easier and doable, carefully read the recipe for steps that can be done ahead without compromising flavor, texture, and appearance. With the exception of fruits and vegetables that oxidize and turn brown when exposed to air, such as potato, apple, pear, banana, but some benefit from a little special handing to help preserve their flavor, texture or color. The onions are cooked slowly to bring out their sweetness. The process of caramelization is created one of the most naturally delectable combinations of sweet, savory, and bitter flavor there is, as the natural sugars in the onions.

Caramelizing onions use a little oil slowly cook over an extended period of time, until they’re richly browned to pull flavor out of the ingredients.

I did not use white onion or yellow to make this recipe. I used red onion caramelized in vegetable oil add complexity flavor in the noodle dishes. And here’re a few of my favorite: in dip, in soup, as a burger or sandwich topping, with eggs, in pasta, on pizza.

Recipe

Shrimp and Yaki Noodles

Makes 2 To 3 Servings

For pickled chili on the side

Ingredients

  • 2 red chilis, roughly cropped
  • 1 yellow chili, roughly cropped
  • ½ Japanese spring onion, finely slice
  • A pinch of sea salt
  • A pinch of brown sugar
  • ¼ cup rice vinegar
  • 1 tablespoon water

For the noodles

Ingredients

  • 150g king oyster mushroom, thinly sliced lengthways
  • 2 Japanese spring onions, finely sliced
  • ½ red pepper, finely sliced
  • 2 garlic cloves, minced
  • 1 large red onion, halved and thinly sliced
  • 2 cm piece of ginger, peeled and grated
  • A pinch of sea salt
  • 150g soba noodles
  • 200g peeled shrimps
  • ½ teaspoon white pepper, freshly ground
  • 2 tablespoon vegetable oil
  • 1 tablespoon light soy sauce

Directions

  1. Cook the noodle in a pan of boiling salted water according to the packet instructions, then drain, reserving ½ cup of cooking water.
  2. Season the shrimps with the ginger and salt, put aside.
  3. Fry the onions in a large frying pan over a medium heat with 2 tablespoons vegetable oil, until it’s browned all over. Turn off the heat, remove the brown onions from the pan, drain on paper towels.
  4. Then put the garlic in the remaining oil and stir-fry for 30 seconds over a medium heat.
  5. Add the shrimps, and fry until starting brown. Add the red peppers, mushrooms, spring onions and cook for further 1 minute, tossing regularly.
  6. Then toss into the pan with the noodles a good splash of reserved noodle water, soy sauce and white pepper. Stir-fry until everything is well coated.
  7. Season to perfection with browned onion, and dish right up.
  8. Serve with a small dish of pickled chilis on the side for extra flavor.
