Prep Tips: How to Cut Mushrooms
Shiitake mushrooms call for this recipe. I like to use sliced mushrooms in stir-fried noodles. Best for getting nutty flavor that will weave its way through the whole stir-fry. To slice these mushrooms, first remove the stems entirely, since it’s usually dried out and tough, then slice them in half, and slice half into pieces of your desired size. If you can get your hand on king oyster and white mushrooms. I recommend using them. They’re work well in this recipe.

Look for an extra-large garlic and they should feel hard and firm. The large garlic cloves make them easier to slice. You can find this garlic at Asian markets or farmers’ markets.
Slice garlic with a sharp knife. To slice it, cut off the root end, then thinly slice lengthwise into slivers. Sliced garlic is best when rapidly cooked over medium-low heat until pale golden brown.
Garlic cooks fast and turns bitter easily, so be sure to watch them closely, and quickly drain when they’re cooked through.
Store the garlic chips in an airtight container and keep it in the refrigerator for up to a month.
