It’s super-spicy and addictive we did eat were wonderfully fragrant herb, such as this feast of spicy beef. Go carefully with the chilis before you add spaghetti all in case it gets too hot for you.

The spicy chopped mixture can prep up to 24 hours ahead of time and kept in the refrigerator, until it time to cook.

Change Things Up!

  • Use thin sliced chicken breast instead of ground beef.
  • Omit the meat and add green bean, or sliced mushroom for a meat-free spaghetti.

Cooking Ingrediets: The Difference Between Black Soy Sauce and Sweet Dark Soy Sauce

A little to show how thick and viscous the sweet version is. The stains left behind are quite different.

Black soy sauce is to give dish a dark rich brown color.

Regular Black Soy sauce is the sauce when a recipe calls simply for “black soy sauce”. The main functions of black soy sauce, is to give your dish a dark rich brown color, and also a deeper, molasses flavor. It’s not usually used in large amount.

Thing actually get a little confusing because for reasons unique recipes for each factory, there are so many formulas for black soy sauce, some are sweeter, not to worry. Because you never use too much of this sauce, and its main purpose is color not flavor. If what you’re using indifferent from, it does mean that you have to be cautious and add a little at a time to ensure you don’t accidentally overdo it.

How to store black soy sauce: Black soy sauce is salty that they won’t go bad in your cabinet, keeping it in the fridge where is cold and dark will help preserve the flavor of soy sauce longer.

I keep mine refrigerated. The sauce gets so sticky the cap is hard to open. And the sauce is hard to pour out. Warm the whole bottle under running hot tap water to make it flow more easily.

You can find alternative brand of black soy sauce in the Asian supermarkets.

Cooking spicy mixture until it is fragrant.

Cook chopped mixture until it is fragrant about 1 minute.

Add fresh basil in spaghetti pan.

Add basil and sauce mixture, stir-fry about 1 minute.

Toss spicy herbs with spaghetti until well coat.

Add the spaghetti and toss until it well coat.

Spaghetti with Spicy Herbs

Make 4 To 5 Servings

Ingredients

  • 5 garlic cloves
  • ½ teaspoon black pepper
  • 1 red large chili, sliced
  • 1 green large chili, sliced
  • 1 bunch of basil (30g), leaves separated
  • 300g ground beef
  • 350g spaghetti
  • 1 head of broccoli (375g each)
  • ¼ teaspoon salt
  • 2 tablespoons fish sauce
  • ¼ teaspoon brown sugar
  • 2 teaspoons black soy sauce
  • ¼ cup cooking water
  • 1 tablespoon vegetable oil

Directions

  1. Cook the spaghetti in a pan of boiling salted water according the packet instructions, then drain, and set aside.
  2. For the sauce: combine the black soy sauce, fish sauce, and sugar in a small bowl and stir until the sugar is dissolved.
  3. Meanwhile, trim the tough end of broccoli stalk. Cut the florets into 1-cm florets and finely slice the remaining stalk.
  4. Place the chili, garlic, black pepper and salt in a food processor and pulse until chopped. Alternatively, you can hand chop them.
  5. In a large skillet with the oil. Add the chopped mixture and cook over medium heat. until it is fragrant about 1 minute. Add the ground beef and cook, tossing occasionally until cooked through, about 3 minutes. Then add the broccoli, basil and sauce mixture, stir-fry about 1 minute.
  6. Add the spaghetti, toss in the stir-fry then immediately add the water, swirling it in around the edges and toss until it well coat.
  7. Transfer to the serving platter. And serve with green vegetables, or top with fresh herbs.
