Keeping Fruit Sliced from Turning Brown

I love creating about fruit ingredients so much that I have an entire. And served sliced apple dishes over to the table year-around. They’re picture-prefect from start to finish. One thing is clear: how and why the fruit slices hadn’t tuned brown, and how to make sliced fruit and vegetable more shinny.

Fruit has a host of enzymes and chemicals designed to deter pests, and bacterial invaders by turning its exposed flesh a mush brown. when the fruit is cutting, bruising, peeling, and the enzyme is exposed to air. These enzymatic caused the food to turn brown and lose some of its nutritional value.

Some fruits are more prone to browning than others because they contain higher level of phenolic compounds and the enzyme polyphenol oxidase (PPO). The fruits that are:

There are several nature ways that can help prevent sliced fruit from browning after cutting, such as using honey, lemon, juice, salt, or ginger. These methods work by either denaturing the enzyme, reducing the oxygen exposure, or adding antioxidants to the fruits.

Some examples are:

  1. Honey contains antioxidants that can slow down the oxidation process that cause browning. Mix 1 tablespoon of honey with a cup of warm water and soak the fruit slices for 30 seconds. Then drain, store covered, in the refrigerator.
  2. Lemon juice is acidic and can inhibit the enzyme that cause browning. Mix 1 tablespoon of lemon juice with 1 cup of water and soak the fruit sliced for 5 minutes. You can use lime juice instead of lemon juice to prevent browning of fruits and vegetables. Lime juice is also acidic and can inhibit the enzyme that causes browning. However, lime juice has a stronger flavor than lemon juice, so it may affect the taste of your food more. You can use the same amount of lime juice as you would use lemon juice, or adjust it according to your preference. 
  3. Salt can reduce the amount of oxygen that reacts with the fruit. Dissolve ½ teaspoon of salt in 4 cups of water and soak the fruit slices for 5 minutes. Then drain and store in an airtight container or using them in a recipe.
  4. Vinegar is another acidic substance that can help prevent browning of fruits and vegetables, However, vinegar has a very strong and sour taste that may not be desirable for some people. Vinegar also has a lower pH than lemon juice, which means it is more acidic and may affect the texture and flavor of the fruit more. If you want to use vinegar, you should use a mild vinegar, such as apple cider vinegar or white wine vinegar, and dilute it with water, which is 1 tablespoon of vinegar to 1 cup of water. Soak the fruit slices in the vinegar solution for 5 minutes, then drain and store them in an airtight container or plastic bag.

What is the best way to store cut fruit?

The best way to store cut fruit depends on the type of fruit, how long you want to keep it, and how long you want to use it. Here are some guidelines for storing cut fruit.

  • Use airtight containers or resealable plastic bags to prevent air exposure and moisture loss. And refrigerate cut fruit as soon as possible to slow down the oxidation process and prevent bacterial growth. Most cut fruits can last for 3 to 5 days in the fridge, but some may spoil faster or slower than others.
  • Freeze cut fruit for longer storage, but be aware that freezing may affect the texture and flavor of the fruit when thawed. Cut fruits can last for 10 to 12 months in the freezer if stored in airtight containers or heavy-duty freezer bag.

How long can I keep sliced fruits in the fridge?

The shelf life of sliced fruits in the fridge depends on the type of fruit, the storage condition, and the freshness of the fruit. Most fruit and vegetable can be simply chopped a few days in advance and refrigerated in airtight containers, can last for about 3 to 5 days. However, some fruit may spoil faster or slower than others, so it is best to check the fruit for sign of browning, mold, or bad smell before eating.

The things are quick and easy here, too. Dissolve salt of water and soak the slices fruit, is my favorite way in the kitchen. You can substitute lime, lemon, vinegar, and honey in any recipe that you’d like.

Step by Step to Make It

Step to make water mix.

Add ½ teaspoon of salt for every 4 cups of water and mix until dissolve.

Peel and cut fruit int to slices.
 Pell and cut 

Pell and cut fruit into slices of your desired thicker.

Place the fruit slices in the mixture water.
 Soak the fruit

Soak the fruit slices in the mixture water for about 5 to 10 minutes.

Drain the fruit slices refrigerated in an airtight container.
 Drain the fruit

Drain the fruit slices, and served right away or refrigerated in an airtight container.
