Fried Rice with Panang Curry

This is our version of a classic Panang curry. It’s one of best fried rice, it’s also a well-crafted curry embraces and supports the ingredients in a dish. It will turn your dish into a thing of beauty.

This dish is supremely satisfying, and tasty oriental on a dinner. Not only does it taste fantastic, but the color is superb, Serve it with the crispy egg, crunch into every mouthful. 

The recipe makes combining hints of the Asian with all the best bits of a spicy flavor put the perfect blend of herbs. Especially when it’s cooked, in the kitchen will be full of the most wonderful aromatic smells, and it has enough elements to keep it exciting.

So, the making of this dish is everything can be prepared a little in advance that’ll make you go easy when cooking time.

  • You can make the Panang curry the day before you need them, and stored, covered, in the fridge, for about 24 hours. Just warm them before cooking.

Variations

  • Use the Panang curry to make the most delicious with pasta or noodle.
  • Substitute chickens for the pork filets.
  • Serve mixed salad instead of crispy egg for enjoying green dish.

  • You can save steps and use store-bought cooked rice or leftover cooked rice.

Kitchen Tips: Crispy Fried Eggs

  • Ideally crispy side-up eggs in this dish. It’s best to use vegetable oil for cleaner egg flavor and extra crispness in the white. For the simplest fried eggs, medium heat is the way to fry crispy eggs by heating up a few tablespoons of oil in a pan, break one egg into a mini bowl. Carefully slip the egg into the oil and use a spoon to spoon the hot oil over the egg white, trying to avoid the yolks as much as possible. Continue doing this until the egg whites are completely set and crip on the bottom. about 1 minute, and drain on a paper towel

Fried Rice with Panang Curry

Makes 2 To 3 Servings

Ingredients

  • 100g green beans, cut into 1-inch long
  • 3 tablespoons vegetable oil
  • ¼ teaspoon palm sugar
  • 2 large red fresh chilis, sliced
  • 1 tablespoon fish sauce
  • 1 tablespoon Thai panang curry paste
  • 1 cup coconut milk
  • 150g jasmine rice
  • 120 pork fillets, slice thinly into strips
  • 3 free-range eggs
  • 3 kaffir lime leafs, very finely sliced
  • ¼ cup water

Directions

  1. Cook 150g jasmine rice as per instructions on the packet (this will make around 300g cooked rice).
  2. When the rice is cooked, leaving the rice covered with the heat off. Using a spoon transfer the cooked rice to a large bowl. Set aside, let them cool slightly.
  3. Pour in the coconut milk to the pan over the low heat, then add Thai panang curry paste, and stir it all together.
  4. Allow the mixture to simmer very gently for a couple of minutes, stirring often, and watching constantly, (add the water, if the pan needed).
  5. Then add the palm sugar and stir to combine the mixture.
  6. Now, turn the heat to medium, then add the palm sugar, pork, and ¼ cup of water. Stir and bring the curry to a boil for 5 minutes, until the curry is slightly thickened and the pork are thoroughly cooked.
  7. Add the cooked rice, stir in the curry along with the green beans, stir it all round to combine.
  8. Then add the red chilis, haft of kaffir lime lefts, and tossing everything together.
  9. In a separate frying pan, fry the egg until crispy at the edges, (fry one egg at a time).
  10. Top each plate with a fried egg drizzle over the remaining of kaffir lime lefts and serve it up!
