Egg Ribbon Taco

Traditional Mexican toppings tacos that involve radish and avocado. Here they combined in an open-face taco that can be served as an appetizer or dinner.

You can pretty much put any taco ingredient in a taco, but instead of stuffing it all inside taco shells, and sprinkle them on top it’s pretty as it is satisfying and when you’re all done eating.

It’s so delightful, fresh, crunchy, with a nice combination of protein and green. So many different things going on, and it’s hard to get bored: crips green, grilled chicken, egg, avocado, and cheese.

There’re all that’s wonderful, good breakfast twist. And you can serve up on a plate with sour cream and yogurt as best eaten healthy at your favorite table morning, and it makes a lovely, satisfying, super any day of the week.

Make Ahead

  • Marinate and grill the chicken up to 1 day in advance and store in the fridge. Dice before cooking time.

Variations

  • Serve with a dollop of sour cream or yogurt as well.
  • Add a spoon of diched bell pepper, if you prefer.

Chang Thing Up

  • Use a several slices of fried bacon, sausage instead of chicken.
Make sauce for seasoning.
 Make Sauce

Whisk 1 teaspoon olive oil, 1 teaspoon lemon juice, ½ teaspoon honey, ¼ teaspoon salt, ¼ black pepper, crushed garlic together in small bowl; set aside.

Use a sharp knife to slice the chicken.
 Prep Chicken

Use a sharp knife to slice right through the middle horizontally, making two thin cutlets. Season chicken with sauce mixture.

Place chicken in pan, can cook until well browned.
 Grill Chicken

Heat nonstick grill pan over medium heat until shimmering. Place chicken in pan, and cook until well browned, 7 to 10 minutes. Flip and continue to grill until completely cooked through; set aside. 

Dip tortillas briefly in water.

To Soften Tortillas

  • Dip them briefly in water not too much just until dip juicy holding the both sides.
Add egg on taco pan.

Pan With a Taco

  • The first taco is rarely perfect, but tacos get better and easier to make after the first 2 or 3. By then, you’ll figure out the best temperature for working at steady rhythm.

Egg Ribbon Taco

Makes 2 Large Crispy Taco

Ingredients

  • 1 skinless chicken breast
  • 1 teaspoon olive oil
  • 1 teaspoon lemon juice
  • ½ teaspoon honey
  • ¼ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper
  • 1 garlic clove, crushed
  • 1 egg, lightly beat
  • 1 small red onion, finely sliced
  • 2 large whole meal tortillas
  • ½ cup grilled ear corn sliced
  • 2 romaine lettuce hearts
  • ½ cup shredded Parmesan cheese
  • 1 cup shredded Cheddar cheese
  • 1 avocado, sliced
  • 2 radishes, thinly sliced

Directions

  1. To make the seasoning, in a bowl, combine the olive oil, lemon juice, and honey, then add the salt, and pepper. And whisk to combine.
  2. Slice the chicken breast in half horizontally.
  3. Place the chicken breasts in a plastic bag and cover them with the seasoning.
  4. Then seal the gabs and let them marinate in the fridge for 8 to 12 hours.
  5. Grill the chicken on a grilled pan on both sides to 7 to 10 minutes total, depending on thickness, until golden brown and completely cooked through.
  6. Slice the grilled chicken into chunks.
  7. Slice the romaine into 2-inch pieces and throw them into a large bowl.
  8. Now, it’s time to build the taco. Lay on the tortilla in the large plate with ½ cup water, not too much just making sure to dip juicy holding the both sides. Then bring it to fry on frying pan over medium heat.
  9. Then pour the half of the egg on the tortilla, and brush the mixture all over the surface.
  10. Let it set to cook for 30 seconds. Then add a layer of cheddar cheese, followed by several chunks of chicken, and cook for future 30 seconds.
  11. Once the cheese start to melt and the edge of the bottom should be sizzling, carefully lift it to the serving plate with 2 spatulas.
  12. And pile on the lettuce, top with slices onion, and grilled corn.
  13. Sprinkle with the shredded Parmesan cheese. and garnish with a few slices of avocado and radishes.
  14. Then serve it up!
