Spicy Crisp Egg on Fried Rice

A lovingly spicy and easy weeknight dinner; a crispy egg, fried rice, hot sauce that spices of the chilies would be a great accompaniment.

The shredding chicken may be, its hot flavor of fried rice and sauce peeking from stir fried, a hot sauce and heavy for its flavor. It’s the small joyous details of cooking that have made it a meal pleasure.

This is a recipe of deliciousness and ideas. I like to add a bit of fire when I can, so to a tasty fried rice I add chopped Chili Pickles to lend heat and acidity, but there’s room for more subtle dishes, such as juice for fresh lime, give it a try.

There are several recipes that call for shredded cooked chicken. If you already have the chicken cooked, shredded, and ready to go, you can turn other recipe into a much faster proposition! No shredded chicken no problem: Add a healthful protein and this recipe easily goes from cooked chicken slices, cooked pork slices, or cooked shrimps. Pick what’s in your pantry or what your family prefers. Stir your selection in with the rice and finish the recipe as direction.

I always keep frozen green peas, soy beans, sweet corn kernels on hand for a quick dish.

Keep frozen peas in the refrigerator.

They’re the green to fresh in minutes. You can cook them in gently boiling water if you’re just looking to use them as a side dish, salad, or any dish that needs a little spring pea freshness, but the best way to use them is to stir them straight into recipes in their frozen state in fried rice, stir-fried noodle. Add them frozen to simmering vegetable soup pasta.

Always have frozen corn kernels in the freezer.

Same as with peas: the next best thing to fresh. Keep it simple by simmering the corns in gently boiling water until tender, then drain off the water and add butter and salt. That’s my favorite afternoon snack, or turn it in to a corn casserole, pizza and bake it topped with grated cheese.

I like to buy frozen vegetables rather than caned form. Soy beans are at the top of my list. Make a delicious side dish, lightly simmered and tossed with olive oil, salt, and pepper is pretty good as well. My favorite way to cook frozen green beans is to throw them in stir fried noodle, or a pot of curry.

There’re all the chili flavors, adding a hot taste.

Hot Sauce

The bottle of wonder is not just for dipping sauce. There’re pretty much all the chili flavors. When it comes to adding a big flavor. Use for quick skillet or spicy sauce for any side dish. Mix it with mayo for a sandwich spread, use them for layering burger. Toss it with pasta, cooked rice. It’s heaven!

These ingredients have load of crunch and is perfect in stir-fries.

Recipe

Spicy Crisp Egg on Fried Rice

Makes 2 Servings

Ingredients

  • 150g brown rice
  • 1 cup shredded chicken or cooked chicken, sliced
  • 2 tablespoons vegetable oil
  • 2 tablespoons hot sauce
  • ½ red bell pepper, chopped
  • ½ cup frozen green peas
  • ½ cup frozen sweet corn kernels
  • ½ cup frozen soy beans
  • 3 spring onions, finely sliced at an angle (reserving for the green tops)
  • ½ onion, finely diced
  • 1 medium carrot, finely diced
  • 1 teaspoon soy sauce
  • 2 garlic cloves, minced
  • 2 large eggs

To serve

  • 2 heaped tablespoons pickled chilies (optional)

To garnish

  • 2 teaspoons  Chili Oil (to save time, you can use store-bought in this dish)
  • 1 tablespoon toasted mixed sesame
  • 2 springs of fresh coriander, roughly chopped (optional)

Directions

  1. Cook brown rice as per instructions on the packet.
  2. Cook frozen peas, beans, and corn kernel in gently boiling water until tender, then drain off the water and set aside.
  3. Pour in 1 tablespoon vegetable oil into a wok or large skillet over medium heat. Add the garlic and onion, stirring regularly for 30 seconds.
  4. Add cooked rice, 2 tablespoons hot sauce. Turn the heat to high, cook and stir for 2 minutes.
  5. Add cooked chicken, carrots, bell peppers, beans, corns and peas. Pour in soy sauce tossing everything mix together.
  6. Then add green onion; cook and stir 30 second or until heated through.
  7. In a separate frying pan, fry the eggs until crispy at the edges.

The Secret:
